Monday night at the Bocks:

Tonight for supper we had Mom's hotdish, and creamy peach pudding...which Emma hated so she opted for you will never guess what kind of yogurt...that's right...peach!  The boys loved the pudding, and we have this hotdish about once a month at our house, with a batch of crescent rolls or biscuits...pretty hearty meal!

Moms Hotdish:
1lb hamburger (browned and drained) (use whatever ground meat you have...good with sausage too)
4 handfuls of noodles (which mom says is about a cup and you should make a handful for each person eating) cooked and drained (I use eggnoodles)
1 can cream soup (I almost always use cream of mushroom)
1 soup can of milk
1 bag of frozen corn (or can if that's what you have)
cubed velveeta (I use a lot...like half a pound)

Mix all ingredients together in a dutch oven, if you are in a hurry you can just heat it through on the stovetop, if you have time, pop the dutch oven in the oven for 30 minutes @350.


Creamy Peach Pudding:
1 cup orzo pasta, cooked, drained, rinsed and cooled
1 29oz can of sliced peaches, save 1/4c of the syrup then drain them
1 3/4c cold milk
1 3.4oz package vanilla pudding
1/4c sugar
2c miniature marshmallows
2c cool whip

In a large bowl, whip (with a wire wisk) the syrup, milk, pudding, and sugar for 2 minutes.  Let stand for 3-5 minutes until soft set.  Fold in pasta, peaches, marshmallows, and cool whip, chill and serve.

I am off to figure out who had the rubber crocodile first, and why my dishwasher thinks he is off for the night, if I have time I will try to post more recipes, a couple new ones I am trying this week, but if not, more tomorrow for sure!
